Take it or Make it: How to make pumpkin cookies

It’s fall, which means that you might be in the mood for something with pumpkin. Making pumpkin cookies with Gimme Some Oven’s recipe may just satisfy that craving by incorporating the best autumn flavors into a sweet treat. 

First, you should whisk together flour, baking powder, baking soda, pumpkin pie spice and salt. This should only take about a minute or two, so you can quickly move onto the next step: using a stand mixer to cream the butter, granulated sugar and brown sugar to create a fluffy mixture. While the recipe calls for this to take place at medium-high speed, this will most likely result in the sugar and butter flying out of the bowl. Therefore, it is best if you start the speed low and slowly increase the speed as the ingredients mix.

Next, you will add pumpkin, egg and vanilla to the sugar-butter mixture by using the mixer on medium-high speed. Once the ingredients are fully combined, you should fold in the dry ingredients with a spatula until the ingredients are fully mixed. 

After this step is complete, you can use tablespoons to mold your cookies and place them on a baking sheet. This is the most challenging step of the process, as the raw pumpkin cookie dough is extremely soft and hard to mold. Once this is complete, you should put the cookie sheet in the oven to bake.  

While they are baking, you can make a cream cheese frosting to put on your cookies by beating cream cheese, butter and vanilla together with an electric mixer. After doing this, you should slowly add powdered sugar to the mixture while the electric mixer is still turned on. When the cookies are ready and cool, you can put the frosting on the cookies, and maybe even add some sprinkles!

The resulting cookie is chewy and full of delicious pumpkin notes. While the cookies are not very sweet, the frosting adds the perfect kick of sugar to balance out the more intense taste of the cookie.
